3 tablespoons of butter
3 tablespoons of wheat flour
1 cup of milk
1 cup of grated cheddar cheese
2 tablespoons of finely chopped onion
salt and pepper to taste
a few drops of hot pepper sauce
2 cups of cooked rice
2 cups of biscuit crumbs
1 egg beaten with 2 tablespoons of water
vegetable oil for frying

Melt the butter in a pan
Combine the flour and mix well
Let the milk come to a boil and then add it to the mixture, stirring vigorously
Add the cheese, onion, and seasonings
Add the rice and mix well
Shape fritters and coat with biscuit crumbs, beaten egg, and again with biscuit crumbs
Let them dry
Fry in hot vegetable oil until golden brown and then drain on paper towels
Serve 4-6 pieces.
