Black pepper and chopped fresh parsley to taste
'Breadcrumbs for coating'
'Vegetable oil for frying'

'1 Cook the sweet potato with salt until it's well mashed.'
Drain and, while still warm, mash in a ricer
'2 Drain the tuna juice.'
'3 In a bowl, mix together the sweet potato, tuna, grated cheese, flour, egg, onion, black pepper, and parsley.'
'4 Shape the fritters and then coat with breadcrumbs.'
Aquicken the oil and fry the fritters until golden
Remove, drain on paper towels, and serve immediately.
