For the grilled meat
500 g of tough beef
4 cloves of minced garlic
1/2 teaspoon of salt
2 tablespoons of olive oil
For the croquette dough
2 tablespoons of finely chopped onion
2 tablespoons of butter
1/2 cup of all-purpose flour
1 cup of beef broth or leftover meat sauce
1 cup of milk
2 tablespoons of chopped parsley
For breading
2 eggs, lightly beaten
3/4 cup of breadcrumbs
Oil for frying

Prepare the grilled meat: season the beef with garlic and salt
In a pressure cooker, heat the olive oil and fry the beef until it's nicely browned
Add 2 cups of water, scraping the bottom of the pan with a wooden spoon, to make the beef even more tender
Cover the pan again and let it simmer for another hour
Remove the beef and let it cool down
(reserve the leftover sauce)
To assemble the croquettes: pass the cooked beef through a meat grinder or food processor. Reserve
In a pan, fry the onion in butter until it's nicely browned
Add the beef, flour, beef broth, and milk
Check the seasoning
Cook over low heat until the mixture thickens and comes away from the sides of the pan (should form a ball)
Add the parsley and mix well
Let it cool down
Shape the croquettes with a spoon
Coat them in egg and then breadcrumbs
Repeat the process, coating again in egg and breadcrumbs
Heat 3 cm of oil in a small pan with high sides
Fry the croquettes one by one until they're nicely browned
Drain them on paper towels and let them cool down
Package the croquettes in aluminum containers suitable for freezing, seal, and put them in the freezer
You should end up with 35 croquettes

Note: When reheating, simply take the croquettes out of the freezer and place them directly into a medium oven (180°C), uncovered, until they're warm.
