12 eggs
1/3 cup of cream cheese or ricotta cheese
1 can of drained tuna
1 medium onion, finely chopped
2 tomatoes, peeled and seeded, finely chopped
2 cups of grated cheddar cheese
2 cups of grated mozzarella cheese

1 Preheat the oven to 425°F
Beat the eggs well, mix in the cream cheese or ricotta cheese, and continue beating until you get a smooth mixture
2 Place the egg mixture in an ungreased refrigerator dish and bake for 10 minutes or until the mixture starts to brown
Remove from the oven and reserve
3 In another container, mix together the tuna and onion
Reduce the oven temperature to 350°F
and distribute the tomatoes over the omelette
Place the tuna with the onion on top, cover with the cheeses, and bake for an additional 30 minutes
Serve immediately.
