1/4 cup Port wine

Shell, clean the crabs and reserve them
Place shells and heads in a pot
Add onion, parsley, and butter
Simmer, stirring occasionally, for 10 minutes
Add water, cover the pot, and let it simmer at low heat for 30 minutes
Remove from heat and blend in a blender
Strain through a fine-mesh sieve and add wines
Return to heat again
When it starts to boil, add reserved crab and cook for 3 minutes
Season with salt
Serve hot
Serves 10
