Half kg of leftover roasted or braised beef, finely chopped

In a pan, heat the olive oil and sauté the onion and parsley
Transfer to a processor and add the beef
Add the water and process medium
Transfer to a pan and dust with a little flour
Season with salt and black pepper and cook over low heat, stirring constantly, until it starts to release from the bottom of the pan
If necessary, add more flour
Let cool
With your hands, shape the croquettes and coat them in egg and breadcrumbs
Fry a few croquettes at a time in hot oil, until golden brown
Remove with a slotted spoon and drain on paper towels
