In a bowl, mix together the sweet potato, flour, butter and salt to obtain a workable dough
Scoop out the dough onto a surface dusted with flour, opening it up to a thin layer
Mix the egg with milk and brush over the opened dough
Cut the dough in half
Dust one half with Parmesan cheese and the other with caraway seeds
Cut into strips about 1 cm wide and 7 cm long
Place on greased baking sheet
Bake in a hot oven for 10 to 12 minutes
Yield about 40-50 sweet potato fritters.
