Melt the butter in a pan, add the onion and sauté for a few minutes
Add the all-purpose flour and stir until golden brown
Add the milk and white wine, let it thicken and season with salt and pepper to taste
Add the chicken and nutmeg and let it cool
Shape the croquettes, dip them in eggs and breadcrumbs and fry them in hot oil
