For the croquette
1/4 cup of finely chopped green onion
1/4 cup of coarsely grated carrot
1 minced garlic clove
500g chicken breast
2 egg whites
1/3 cup of oat flour
2 tablespoons of ketchup
1 tablespoon of mustard
1/2 teaspoon of sweet paprika
Salt to taste
For the coating
1/2 cup of crushed cornflakes
1/2 teaspoon of sweet paprika
1 pinch of red pepper flakes
For the sauce
1/4 cup of heavy cream
1 tablespoon of lemon juice
1 tablespoon of chopped fresh parsley
For the croquette

Mix the green onion, carrot, and garlic in a heatproof bowl
Add the remaining croquette ingredients, season, and mix well
Divide the mixture into 10 equal parts, using 1/4 cup to form the croquettes
Shape them
Mix the coating ingredients and coat each croquette
Arrange on a heatproof plate and microwave at high power for 6-9 minutes or until the croquettes are firm and cooked through
Let it rest in the oven for an additional 4 minutes
In a small bowl, mix the sauce ingredients and serve with the croquettes.
