2 tablespoons of oil

2 tomatoes, peeled and seeded, diced
600g frozen or canned corn
1/2 cup of water
1/2 cup of cornstarch
2 cups of breadcrumbs
2 eggs, lightly beaten

In a pan with oil, sauté the garlic and onion until starting to brown
Add the tomato and half of the corn and cook for a few more minutes
Season, remove from heat, and reserve
In a blender, blend the remaining corn with water and cornstarch
Mix this mixture with the cooked mixture and bring to a simmer, stirring until thickened
Remove from heat and let cool
Form croquettes using 1 tablespoon of the batter and then coat in breadcrumbs, egg, and breadcrumbs again
Fry them, in batches, in hot oil until golden
Drain on paper towels and serve warm
