Cut the ham into small cubes
Cut the bacon equally into small cubes and fry until golden brown
Soak the egg whites in beef broth and squeeze well
Mix with the bacon, ham, eggs, and breadcrumbs
Season with salt, black pepper, and chives
Add enough breadcrumbs to obtain a firm dough
Let it rest for 30 minutes
Shape into medium-sized balls and cook in boiling water, seasoned with salt, over low heat for about 25 minutes
