Combine the sweet potato, salt, pepper, melted butter or margarine, egg yolk, and beat well
Add the chopped parsley and finely chopped onion
Shape into croquettes
Dredge in bread crumbs, then in the beaten egg, and finally in the bread crumbs again
Fry in hot oil or fat
Drain on paper towels.
