1/2 cup of butter or margarine
2 onions
600g cooked or roasted beef, cut into cubes
1 cup of Madeira wine
200g ricotta or Minas cheese, mashed
salt and black pepper to taste
100g grated Parmesan cheese
2/3 cup mayonnaise
2 tablespoons flavorless gelatin
1 liter beef broth
1/2 cup of butter or margarine

Melt the butter or margarine, add onion and fry slowly
Add the beef cubes and stir for a few minutes with a wooden spoon
Add the Madeira wine and let it simmer until evaporated
Remove the beef from heat and grind in a food processor
Place in a bowl
Add mashed ricotta or Minas cheese
Season with salt, black pepper, Parmesan cheese, and mayonnaise
Place in an English muffin tin lined with aluminum foil
Level the beef
Refrigerate for some hours
Soften gelatin in a little cold broth
Add the remaining broth while whisking to dissolve the gelatin
Place in a flat container
Let it cool
Refrigerate again
Unmold the beef on a serving plate
Garnish with firm jelled gelatin cut into squares
If desired, add a little wine to the gelatin before refrigerating
Serve 4-6 portions.
