Peel the onion, finely chop it, and fry it in oil until golden brown
Drain on paper towels and reserve
Roll out the dough to a thickness of 1/2 cm and cut into circles with a diameter of 4.5 cm
Place in a large baking dish
Brush with egg yolk, sprinkle with a little onion and black pepper
Bake in a preheated moderate oven (180°C) for about 15 minutes or until golden brown
If desired, garnish with red bell pepper cut into star shapes using a specialized cutter
Yield approximately 66 fritters
To freeze: let the fritters cool completely on the baking dish
Place in the freezer to freeze, leaving space between each one
Retrieve from the freezer and place the fritters in a plastic bag specifically for food
Remove air, seal with crepe tape, and return to the freezer
To thaw: retrieve the fritters from the freezer and let them come to room temperature.
