Melt the butter, combine with flour and onion
Add milk and cook, stirring constantly, until thickened well
Add beaten egg mixed with lemon juice
Combine with ham, salt, and pepper to taste
Pour into a flat dish and let cool
Shape croquettes
Refrigerate
Dredge in bread crumbs, then in a mixture of 2 tablespoons of water and beaten egg, and finally again in bread crumbs
Let rest for about 10 minutes
Fry in plenty of fat or oil until golden brown
Serve in 4 portions.
