Prepare a basket, shallow dish, or even a bowl of ice, your preferred raw legumes, previously washed or peeled, cut into strips or left whole. Our suggestion: cucumber, carrot, celery (celery root), sweet herb, bell pepper, tomatoes, radishes, cauliflower, and broccoli florets. You can also add hard-boiled eggs, onions, and complete with a leaf arrangement (raw spinach, rucola, beet greens etc.). Serve accompanied by the cucumber sauce and pink sauce, placed in a shallow dish.
