Chocolate Truffle

Cover a smooth surface with a piece of wax paper

Melt the chocolate in a warm water bath

Remove a spoonful and shape the base of the truffle on the wax paper with the melted chocolate

Fill the rubber balloons and tie them off

Dunk one of them into the melted chocolate, coating it about three-quarters of the way

Remove and place over the circle of chocolate

Repeat the entire process with the remaining balloons

Allow the chocolate to set for at least five minutes

Hold the balloon firmly just below the nipple, preventing air from passing through

With a pair of scissors, make a small incision between the nipple and your fingers and control the airflow, which should be very slow

When empty, carefully peel the balloon away from the chocolate truffle.
