Cover and simmer over low heat until the meat and vegetables are tender (if necessary, add more water so it doesn't dry out)
Reserve 1 cup of broth for preparing the rice cakes
Prepare the rice cakes: In a medium-sized pot, combine 1 cup of water, lamb broth, and olive oil
Season with salt
When boiling, add the rice cakes and butter
Remove from heat and mix with a spoon until all the water is absorbed
To serve, place the rice cakes in the center of a plate (preferably, a slightly deep one) and arrange around it the lamb chops with vegetables
