In a medium saucepan, bring the water, olive oil, salt, dried fruits, and pistachios to a boil over high heat for 2 minutes
Remove from heat, add the couscous, and let it sit for 2 minutes to hydrate
Add the butter and cook over low heat, stirring occasionally with a fork to separate the grains until soft (about 3 minutes)
Remove and let cool
Serving at room temperature
