Whisk the egg whites until stiff, then mix in the sugar and lemon zest
Shape into two round, shallow molds (similar to pizza crusts), lined with parchment paper
Once baked, carefully remove from oven to avoid breaking
When serving, place one of the meringue rounds on a plate, top with your preferred ice cream, and add the second meringue round on top
If desired, garnish with whipped cream
Ice cream can be substituted with chantilly cream with strawberries
