3 cups of wheat flour (300 g)
1 cup of butter or margarine (200 g)
1/2 cup of sugar (100 g)
2 eggs
Lime zest (1/2 teaspoon)
4 fresh pineapple slices or 1 can
For the whipped cream:
1 egg white
1 tablespoon of sugar
2 tablespoons of grated coconut
1 tablespoon of butter

For the whipped cream:
1 egg white
1 tablespoon of sugar
2 tablespoons of grated coconut
1 tablespoon of butter
Place the flour on a table or counter
Make an indentation in the center and add the sugar, eggs, and lime zest
Mix well the eggs, sugar, and lime zest
Add the butter and knead well
Let it rest for 30 minutes
Roll out the dough to about 1 cm thick
Cut into squares
Place a pineapple slice on each square and fold the edges inwards
For the whipped cream, beat the egg white with sugar
Fry the grated coconut in butter and add to the whipped cream
Place some on top of each pineapple slice and bake in a moderate oven for 15-20 minutes
Serve 4 puddings.
