Scald the milk
Meanwhile, in a saucepan, melt the sugar to obtain a golden syrup
Pour the syrup into the hot milk and heat it in a water bath, stirring occasionally until the syrup dissolves
Beat the egg yolks until they become frothy and add the warm milk gradually, beating constantly
Strain through a fine-mesh sieve and pour into 12 small buttered cups
Place the cups in a roasting pan lined with parchment paper
Add hot water to come halfway up the cups
Bake in a preheated oven at 200°C for 20 minutes or until firm
Remove from the roasting pan and let cool
Refrigerate and unmold just before serving
