Cut the pumpkin into 3-centimeter cubes
Soak the lime juice in 2 liters of cold water and drizzle it over the pumpkins
Let it sit for two hours
Drain and eliminate excess liquid
Wash the pumpkin chunks in running water two or three times
Combine sugar, water, clove buds, and cinnamon stick in a saucepan and bring to a simmer, then add the pumpkin chunks
Gently stir the pumpkin to absorb the syrup and transfer it to a serving dish
Simmer over low heat until the pumpkin is tender but still holds its shape, then remove with a skimmer
Transfer the pumpkin to a compote dish and reduce the syrup to a thread-like consistency, then drizzle it over the pumpkin
Let it cool before serving, in individual servings.
