In a large pot, cover the sweet potatoes with water and cook over high heat until they become soft but still firm to the touch (about 45 minutes)
To check if it's ready, pierce it with a fork from time to time
Drain and let cool
Peel the sweet potatoes, cut them into 2 cm cubes, and set aside
In a medium pot, bring the cloves, water, and sugar to a boil over medium heat, stirring until dissolved
Leave it on the stove without stirring until the syrup reaches the thread stage (let some of the syrup drizzle off a spoon; if it forms a consistent string, it's ready)
Add the sweet potatoes and simmer for 5 minutes
Remove from heat and let cool
Serve at room temperature or refrigerate in a covered container until serving time
