1 1/2 kg of purple sweet potatoes
1 kg of sugar
2 tablespoons (soup spoon) of butter or margarine - 30 g
1 tablespoon (chopped) of vanilla extract - 5 ml

2 tablespoons (soup spoon) of butter or margarine - 30 g
1 tablespoon (chopped) of vanilla extract - 5 ml
Cook the purple sweet potatoes until they're tender
Peel and mash them
Remove any excess fibers
Put the mashed sweet potatoes in a pan, along with sugar and butter or margarine
Simmer over low heat
Stir constantly until the bottom of the pan is visible, for about 35 minutes, being careful not to burn, as this pudding can be quite fiery
Remove from the heat, add vanilla extract, and mix well
Let it cool and then put it in a serving dish
Serve 6 portions.
