Soak the peel in water and simmer for five minutes
Turn off the heat and let it sit in the same water for four hours
Change the water six times a day for two days
Strain the peels and squeeze them out
Let the segments dry on a strainer
Mix the juice, sugar, and water, and cook until it reaches a syrupy consistency
Add the peels and simmer over low heat until it thickens
Let it cool overnight in the syrup
Strain and serve.
