Mix the sugar with the butter, beating well; then add the egg yolks, one at a time, and beat carefully after each one
Melt the chocolate in a bain-marie and add the mixture of egg yolks
Finally, add the beaten egg whites
Divide the dough into 3 parts: reserve one part in the refrigerator; place the two remaining parts in two well-greased round baking dishes or molds
Bake in a hot oven for 10 minutes
After that, reduce the heat and bake for another 15 minutes in a moderate oven
Fill with cold gelatinous dough and cover the cake with melted chocolate
Leave it in the refrigerator until serving time
It's best to make this cake 2 or 3 days before serving or at least by evening.
