12 finely chopped oranges (to obtain 300 g of peel)
300 g of sugar
1 cup (chamomile tea) of orange juice

In a large bowl with plenty of water, let the peels soak overnight
Change the water several times
In a saucepan, bring the peels to a boil and cook for an hour or until they start to soften
Strain
Leave the peels in the saucepan and add sugar and orange juice
Bring to a boil again and cook, stirring occasionally, until it reaches the pull stage (the thread will still be slightly resistant with a drop on the end)
Remove from heat, let cool, and if desired, place in a compote dish.
