Remove the pineapple rinds, leaving only the white part and cover with water
Soak for 1 day to another
Drain and place in a pot
Add sugar, water, pineapple juice, and cinnamon
Bring to a boil and cook for 1 hour or until the pineapples become soft and form a thick syrup.
