Three cups of sugar
One-quarter cup of red food coloring
One-fourth teaspoon of salt
One and one-half cups of heavy cream
One tablespoon of butter
One and one-half teaspoons of vanilla
125 grams of shredded coconut
Three cups of sugar
One-quarter cup of red food coloring
One-fourth teaspoon of salt
One and one-half cups of heavy cream
One tablespoon of butter
One and one-half teaspoons of vanilla
125 grams of shredded coconut
Combine the sugar, food coloring, salt, cream, and butter in a heavy saucepan
Stir over medium heat until the sugar has dissolved, then continue cooking without stirring until the custard reaches a soft-ball stage (when a small amount of the mixture dropped into cold water forms a soft ball)
Remove from the heat, add the vanilla, and let it cool to room temperature
Stir until the mixture thickens and loses its sheen
Add one cup of shredded coconut and pour into a square pan
Sprinkle with the remaining coconut and press down gently on the custard
When firm, cut into squares.
