1 cup of almond meal

1/4 cup of confectioner's sugar

Soak the almonds in boiling water for 1 minute, then drain and peel them
Pulse the almonds in a processor with the egg and confectioner's sugar until smooth
Remove from the processor and shape into a ball with the mixture
Tear off small pieces, roll each one into a log of about 2.5 cm in diameter, and cut into 3 cm pieces
Place them on a greased baking sheet and bake at moderate heat (180°C) for 20 minutes or until lightly golden
Allow to cool, then garnish with dried rose petals and silver confectionery if desired
Yields approximately 24 units.
