Prepare the dough: In a large bowl, dissolve the yeast in warm water and let it sit to foam
In another bowl, mix with an electric mixer or by hand until smooth: milk, salt, sugar, melted butter, and egg
Add the yeast mixture and mix well
Add the remaining ingredients and knead until a smooth dough forms
Cover with plastic wrap and let it rise for 2 hours at room temperature
Roll out the dough on a lightly floured surface to a thickness of about 1 cm (0.4 in)
Cut into rings using a donut cutter or the rim of a glass
Place the doughnuts onto a baking sheet lined with parchment paper, leaving space between each one
Heat vegetable oil in a deep frying pan over medium heat to 180°C (350°F)
Fry the doughnuts, two at a time, until they are golden brown and cooked through
Remove from the oil with a slotted spoon and let them cool on paper towels
Prepare the glaze: In a small bowl, mix confectioners' sugar, milk, and vanilla extract until smooth
In another bowl, place the chopped pecans
Dip one side of each cooled doughnut into the glaze and then roll in the pecans to coat
Place the glazed doughnuts onto a serving plate or tray, leaving space between each one
Serve at room temperature
