2 kg of potatoes
1 chopped onion
1 cup of chopped parsley
1 sprig of thyme, chopped
Juice from 2 lemons
Salt and black pepper to taste
500 g of tuna in oil, drained
5 tablespoons of mayonnaise
150 g of pitted green olives, sliced
2 hard-boiled eggs, sliced
2 kg of potatoes

Boil the potatoes in salted water until tender
Drain and mash them
Combine the chopped onion, parsley, thyme, lemon juice, salt, and pepper
Mix well
Add a squeeze of lemon juice to the potato mixture and mix again
Cover a bowl with plastic wrap and fill it with the mashed potatoes, leaving room at the top
Set aside 1 cup (chalice) of mashed potatoes
Mix the tuna with mayonnaise until thick and creamy
Spread half of this mixture over the potatoes
Make layers with the eggs, olives, and remaining tuna mixture until all ingredients are used up
Finish with the remaining potato layer
Refrigerate for at least 3 hours
Carefully unmold and serve chilled.
