Season part of the shrimp with salt, lemon juice, and let it sit for a while. Prepare a pan sauce with 1/2 chopped onion, mixed seasoning in powder (pepper, fondor, etc). Combine 1 generous tablespoon of ketchup in a pan with 1 tablespoon each of oil and butter to tenderize the shrimp. Place on top of each fish fillet: 1 tablespoon of shrimp, 1 slice of mozzarella cheese, and 1 slice of prosciutto. Secure with toothpicks. Next, beat 2 eggs and pour them into another plate with 2 cups of breadcrumbs. Dip the roll morsels in the eggs and then in the breadcrumbs. Fry them in hot oil. Drain excess oil. Sauce: 3 tomatoes pureed through a blender, 2 tablespoons of white vinegar, salt, black pepper, 1/2 cup of ketchup, and generous tablespoons of white wine. Pour into a pan with a little bit of cod fat where a well-mashed garlic clove is browning. Let it simmer for 5 minutes. Add the remaining shrimp. Arrange the roll morsels on a baking dish, pour the sauce over them, sprinkle with grated Parmesan cheese, and bake in the oven to brown.
