Combine flour, yeast, and butter to form a crumbly mixture
Add water to form a smooth dough
Knead well
Roll out the dough, cut into circles
For the gelée
Bring a saucepan to a simmer with strawberries and sugar
Let cook until the fruit is tender and the liquid has reduced
Turn off heat; add powdered gelatin and stir
Fill dough circles with strawberry gelée
Close with egg white, sealing edges
Bake in a moderate oven.
