12 beef pieces, cut into 2 portions (6 bife-sized pieces)
Salt and black pepper to taste
1 bunch of fresh spinach
4 hard-boiled eggs, diced
2 lightly beaten eggs
1/2 cup grated Parmesan cheese
1/2 teaspoon dried oregano
2 tablespoons olive oil for frying
2 cups water

Beat the beef into fine pieces
Season with salt, black pepper to taste, and reserve
Wash and dry the spinach thoroughly
Simmer the spinach in its own moisture until it's tender
Squeeze out excess moisture and chop the spinach
Mix the chopped spinach with the hard-boiled eggs, lightly beaten eggs, Parmesan cheese, and oregano
Spread this mixture onto the beef pieces and roll them up
Tie the rolls securely with kitchen twine or close with toothpicks or skewers
Heat the olive oil in a pan and fry the roulades slowly, turning until golden brown on all sides
Add water to the pan and cook until the meat is tender (approximately 25 minutes)
Serves 4-6 people
