1 cup of coconut milk
3 cloves of garlic, minced
1 onion, diced
2 tablespoons of lime juice
1/2 cup of rum
1/2 teaspoon of salt
1 crushed red pepper
8 fish fillets (or cod)
3 tablespoons of olive oil
1 tomato, cut into wedges
Fresh parsley to taste

Combine all ingredients, except for the tomato and parsley, in a pan and let it marinate for at least 3 hours
Bring to a simmer and cook for 20 minutes or until the fish flakes easily with a fork
Slightly sauté the tomato in olive oil and add it to the fish plate
Garnish with parsley.
