Filling
5 mangoes without skin and seeds
Juice of 1 lime
3 tablespoons of melted butter
3 tablespoons of sugar
2 tablespoons of sponge cake flour
1/2 cup (chalice) of seedless raisins
1 tablespoon of ground cinnamon

300g of wheat flour
1 tablespoon of sugar
1 egg
1 pinch of salt

Filling
Slice the mangoes into thin slices, place them in a bowl, drizzle with lime juice and reserve
Dough
Mix together the wheat flour, sugar, egg, salt, and gradually add water to obtain a homogeneous dough
Wrap in plastic wrap and let rest for an hour

Preheat the oven to 180°C
Roll out the dough on a floured surface with a rolling pin until it is very thin
Brush the entire surface of the dough with 2 tablespoons of melted butter

Sprinkle with 2 tablespoons of sugar, spread the mango, add another tablespoon of sugar, sponge cake flour, raisins, and ground cinnamon

Roll up the dough, brush with remaining melted butter, and bake in the oven for about 30 minutes or until the dough is golden brown
Remove from the oven, sprinkle with a little more sugar, and serve.
