1/2 cup of olive oil
1 large onion, chopped
3 cloves of garlic, minced
1/4 cup of vegetable oil
1.2 kg of short ribs, cut into cubes
2 cups of beef broth
Salt to taste
1/2 teaspoon of black pepper
1 small bunch of parsley
500 g of Moroccan couscous
3 tablespoons of chopped fresh cilantro
1 stalk of sweet potato, peeled and sliced

In a large pot, heat the olive oil and sauté the onion and garlic until softened
In another pot, heat the vegetable oil and brown the short ribs on all sides
Transfer the short ribs to the pot with the onion and garlic, add beef broth, salt, and black pepper
Cover and simmer for 1 hour or until the meat is tender, without letting the liquid evaporate too much
If necessary, add more beef broth
When the braise is almost ready, remove the short ribs, add the parsley, and simmer for an additional 3 minutes
Prepare the Moroccan couscous according to package instructions
Combine the cilantro, and serve with the braised short ribs and couscous on the side.
