4 small fish fillets
1 lime
salt and pepper to taste
4 green scallions
3 bunches of sweet herb
1 can of mushrooms
4 tablespoons of olive oil
1 cup of white wine
Sauce:
2 red bell peppers
2 cloves of garlic
1 slice of bread
6 tablespoons of mayonnaise
salt and pepper to taste

Clean the fish and remove the bones
Soak it inside and out with lime juice
Let it rest for 10 minutes
Season the fish with salt and pepper
Chop the scallion, sweet herb, and mushrooms
Place 1 tablespoon of this mixture inside each fish fillet
Grease a baking dish and cover the bottom with any leftover filling
Add the fish on top
Pour the wine over it
Sprinkle with salt and pepper
Cover with aluminum foil and bake in a moderate oven, preheated, for 1 hour or until the fish is cooked
For the sauce, roast the bell pepper in the oven until the skin starts to char
Let it cool and remove the skin
Chop the capers and blend them with the garlic
Blend the roasted peppers with the olive oil, adding it slowly while mixing
Finally, add the white wine and mayonnaise
Serve over the cooked fish
