2 sprigs of rosemary, crushed
350g of Calabrian sausage, ground
500g of long pasta, type spaghetti or fettuccine
Parmesan cheese, grated to taste
Salt and black pepper, to taste

Season the meat with salt and pepper
Place it in a pan, add the olive oil, butter, onions, and garlic
Let it brown well on all sides for 5 minutes
After that, reduce the heat, add 1/4 cup of water, and scrape off the golden sauce that has accumulated at the bottom of the pan
Repeat this process several times until there is no more golden sauce in the pan
Add the rosemary and remaining water
Bring to a boil with the lid on
Reduce the heat and simmer for 2 hours or until the meat becomes tender
Remove the meat from the pan, cut it into strips, and return it to the pan
Add the ground sausage and stir well
In a separate pot, cook the pasta in plenty of boiling water with salt until al dente
Drain and mix with the sauce
Serve with grated Parmesan cheese
