Boil the potatoes and mash them
Combine the remaining ingredients, excluding the ham and cheese
Knead well and divide the dough into three parts
Take three napkins, one for each part
Flour the napkins and open the dough on top of the napkins with a floured hand, achieving a thickness of 1 centimeter
Place a layer of grated cheese and then a layer of ham on top of the dough
Roll up the dough like a croissant and then roll it around the napkin, securing the ends
Repeat the operation with the remaining ingredients
Place the stuffed potatoes wrapped in napkins to cook in boiling salted water for 1/2 hour
On the side, make a tomato sauce with ground meat, garlic, pepper, olives, etc
After cooking, carefully remove the potatoes from the napkins
Cut into slices and serve in a pyrex dish in alternating layers with the tomato sauce and grated cheese.
