Cut the beef into 36 small pieces and the defatted smoked bacon into 24 small squares
Peel the onions and cut them in half horizontally
Wash the tomatoes, pat them dry, and cut them like the onions, removing the seeds
Use twelve long skewers made of wood or metal and start threading first a piece of beef, then half a tomato, a square of defatted smoked bacon, and finally half an onion
Repeat this process until you have used up all the ingredients
Finish each skewer with a piece of beef
Place the skewers in a container and sprinkle them with salt and pepper
Brush them with olive oil and cook them in a hot oven or over a grill for about 20 minutes
Serve with lime wedges
