Wash and trim the meat
Cut it into small cubes and marinate in all temperatures for a few hours
Cut the eggplant into cubes
Cut the bacon rinds into small pieces
Pat dry the meat
Thread onto skewers, alternating between meat, bacon, eggplant, and again meat, and so on
Grill until the meat is nicely toasted
Garnish with half of the chopped tomatoes, salted and seasoned with olive oil.
