Add the flour and cook, stirring constantly, until it forms a ball at the bottom of the pan
Remove from heat, add sweet potato puree and egg, mixing well
Let cool
Shape into balls, coat with flour, and fry in hot oil
Sauce
Process yogurt, cheese, olive oil, salt, and pepper in a food processor
Sprinkle parsley
Assemble three sweet potato fritters on an espetinho stick
Serve with the sauce.
