In a bowl, season the meat, tomatoes, and mushrooms with salt, garlic, thyme, red pepper flakes, and olive oil
Skewer the beef cubes, alternating with mushrooms and tomatoes
Reserve for 15 minutes
Grill the skewers over medium heat for 30 minutes, turning them occasionally until they're golden brown
Serve immediately with a salad of mashed potatoes topped with salsa.
