1/4 cup of finely chopped green onion
1/4 cup of grated carrot
2 cloves of garlic, minced
1/2 pound of chicken or turkey breast, ground
2 egg whites
1/3 cup of oats
2 tablespoons of ketchup
Salt and black pepper to taste
15 wooden skewers
Coating:
1/4 cup of panko breadcrumbs
Season with paprika to taste
Mustard Sauce:
4 tablespoons of heavy cream
1 tablespoon of lemon juice
1 tablespoon of mustard
1 tablespoon of chopped fresh parsley

Combine the onion, carrot, and garlic in a heatproof bowl
Cover with a plate and microwave on high for 2 minutes or until cooked through but still slightly crispy
Add the remaining ingredients except for the coating and sauce
Divide the mixture into 15 portions using 2 tablespoons of mixture per portion
Shape into oval balls and insert one toothpick into each
Mix the coating ingredients and coat each skewer
Arrange the skewers with the meat side out on a microwave-safe plate
Cook on high for 6 to 9 minutes or until firm and cooked through
Remove from oven and let rest for 4 minutes
Serve with the sauce made by combining all the ingredients.
