Chop the onion
Put it in a bowl, add the egg, salt, and black pepper to taste
Mix well with the linguiça, breadcrumbs, and parsley
Shape into small balls and let them rest in the refrigerator for 1 hour (make about 24 balls)
Wash the mashed potatoes, cut them in half, and remove the seeds
Cut each half into 5 sticks
Soak with lemon juice oil to prevent browning
On the skewers, alternate linguiça balls and potato sticks
Place on a grill or baking sheet
Baste with oil and cook until the linguiça is cooked through
