1/2 kg of spinach
8 slices of bacon

3 tablespoons of vinegar
1/2 teaspoon of salt

Wash the spinach well
Cook with a little water for 8 to 10 minutes
Drain
While this is happening, cook the bacon until it's crispy; drain, reserving 1 tablespoon of fat
Break the bacon into pieces
Cook the onion in the reserved fat until it's soft but not browned; combine with the spinach, bacon, vinegar, salt, and pepper
Stir gently
Garnish with egg wedges
Serve 4 ways.
