5 cups of spinach leaves
3 cloves of garlic, minced
6 tablespoons of olive oil
4 slices of bread, cut in half
1 tablespoon of vinegar
Salt and black pepper
1/2 cup of red onion, sliced
4 pitted green olives, chopped

Steam the spinach for 1 minute, or until it starts to wilt
Mix the garlic with olive oil
Brush both sides of the bread with some of that mixture and bake in the oven for about 7 minutes
Mix the vinegar, remaining olive oil, garlic, salt, and black pepper
Set aside
Combine the spinach, red onion, and olives
Add the vinaigrette and mix well
Serve with toasted bread
